Salmon with brown sugar & soy sauce marinade

Sometimes normal baked salmon isn’t my favorite so I decided to try this marinade to give it some flavor because let’s face it, salmon is so good for you!

Ingredients:
1 ½ pounds salmon filets
Lemon pepper to taste
Garlic to taste
Salt to taste (I skipped this figuring the soy sauce had enough sodium for me)
1/3 cup soy sauce (I used reduced sodium)
1/3 cup brown sugar
1/3 cup water
1/3 cup vegetable oil (I used extra virgin olive oil)

Season salmon filets with lemon pepper, salt and garlic.  In a small bowl stir together soy sauce, brown sugar, water and oil until sugar is dissolved.  Place fish in a large resealable bag with the mixture.  Turn to coat.  Refrigerate for 2 hours.  (Mine marinated for about an hour and then I got hungry).  If you are using a grill, spray oil on grate and cook for 6-8 minutes each side or until the fish flakes easily with a fork. If you are using the broiler, broil 5-6 minutes. 

This marinade was a great addition to normal salmon.  It was sweet and savory but not overdone.  Very tasty, easy to make and I will make this again.
