Bacon Ranch Chicken Bake



Ingredients:
3-­4 Chicken Breasts
6­-8 Tablespoons Ranch Dressing
8-12 Slices Bacon
4 Ounces Cheddar Cheese or Colby Jack Cheese


Preheat oven to 400 degrees.  Place your chicken breast in a baking dish.  Spread 1-­2 tablespoons of ranch dressing on each chicken breast.  Wrap with slices of bacon. Bake on top rack for 25­-35 minutes or until chicken is no longer pink.  Top with cheese and return to oven for 3-­5 minutes or until cheese is melted.

BLT Rollers

For our crafting at the cabin recipe, I used a recipe I found off the Kraft Recipes site -- http://www.kraftrecipes.com/recipes/blt-rollers-124708.aspx.  Very easy, and very delicious.

Here's what you'll need (via kraft recipes):

First , I would recommend doubling this recipe if you're making it for a party.  Once batch is really not enough for more than four people or so.

  • 4 oz. Cream Cheese
  • 1/4 Cup Mayo
  • 8 slices Bacon, cooked, crumbled (I just purchased the bacon crumbles you can find near the Baco Bits in the grocery store -- much easier and tasted just as good!)
  • 1/2 cup chopped tomoatoes
  •  2 flour tortillas (I used tomato tortillas)
  • 1/2 cup shredded romaine lettuce (I used spinach leaves)
Here's what you do:
  • Mix cream cheese and mayo in medium bowl.  Add bacon and tomatoes; mix well.
  • Spread onto tortillas; top with lettuce/spinach.  Roll up tightly.
  • Cut each into 7 diagonal slices.  This seemed very small to me.  So, I cut each into about four non-diagonal slices.  By doing that they sat better in the serving container, and you got more of a taste of the BLT flavor.  
These were delicious, and I would definitely make them again!

Healthified spicy wraps

Review by Lyndee:

4-5 Burrito shells -depending how thick you want them (you could use a low carb variety too)
1 package of cream cheese (I used reduced fat)
2 green onions
Small can of black olives (optional)
Small can of green chilies
Cilantro to taste – I don’t really measure it because it’s hard to measure cilantro.  I used a small handful. 2 tbsp.(ish) of hot sauce (I used Siracha hot sauce)
¼ cup shredded cheddar cheese (I used 2%)

Mix everything except the burrito shells, cream cheese and shredded cheddar in a food chopper for just a few pulses.  Mix with the cream cheese, spread on the shells, sprinkle with shredded cheese.  Refrigerate for a couple hours, cut and enjoy! 

These were great. I don't even like olives but they didn't bother me in this recipe at all.  Very fun finger food for a party or as a wrap for lunch. You could add chicken breast too.
