When it's snowing in October I will find any reason to turn on the oven. Sunday meal prep for lunches this week...baked firecracker chicken.
Ingredients:
1/2 cup hot sauce (I used Sriracha)
1/2 cup brown sugar
1 Tbsp soy sauce
1 Tbsp cider vinegar
1 Tbsp minced garlic
1 pinch red pepper flakes
1 Tbsp oil
1 pound boneless and skinless chicken breasts
Salt and pepper to taste
Preheat oven to 400 degrees. Heat the hot sauce, sugar, soy sauce,
vinegar, garlic and chili pepper flakes in a small sauce pan until the sugar
has melted into the sauce.
Heat the oil in a large oven safe skillet over medium-high heat. Season
the chicken with salt and pepper. Add to the pan and brown, about 3-5 minutes
per side.
Transfer to oven safe dish. Pour 1/3 of the sauce over the chicken and
bake until cooked, about 10-15 minutes, basting with the sauce every 5 minutes.
Enjoy with the remaining sauce!
