Blueberry Cheesecake Cookies


Ingredients:
2 boxes Jiffy Blueberry Muffin mix
4 oz. cream cheese
1 stick butter
½ C. light brown sugar, firmly packed
2 eggs
1 ½ C. white chocolate chips

Cream together butter, cream cheese, and brown sugar. Add eggs one at a time until blended. Combine muffin mix with the butter mixture and mix well. Fold in white chocolate chips. Chill for at least one hour.

Preheat oven to 325 degrees.

Drop by spoonful onto greased cookie sheet, 2 inches apart. Bake for 14-15 minutes or until just turning brown around the edges. Cool on cookie sheet for 1-2 minutes. Transfer to wire rack until completely cooled.


If you like blueberry muffins, you must try these cookies! They came out a little flat even though I chilled them overnight but the taste is great.

Caramel apple cheesecake cookies

Ingredients:
1 box caramel apple cake mix
1 small box instant cheesecake pudding mix
½ cup vegetable oil
2 eggs
¾ cup white chocolate chips

Preheat oven to 350. Spray a cookie sheet or line with parchment paper.  Combine pudding, cake mix, oil and eggs in a medium bowl until dough forms. Mix in white chocolate chips.  Place balls of dough 2 inches apart on cookie sheet.  Bake for 8-10 minutes or until cookies began to brown.  Remove from oven and let cool. 

Saturday was a rainy day and of course, I got the urge to bake. I had wanted to try a new cookie recipe. I love everything apples and was excited when I found this one.  They were super easy to make. The hardest part was finding a caramel apple cake mix. I had to go to two stores, but that didn’t stop me, aka, the cookie monster.  I wasn’t super impressed with the raw dough when I tested it but the end result was awesome! Totally satisfied my sweet tooth and I will definitely make them again.

Weight Watchers Cheesecake Squares (5 points)

Makes 16 squares

Ingredients
1 (8 ounce) package cream cheese, softened (I used low fat)
3/4 cup M&M or Smarties candies
1/2 cup walnuts, chopped (optional)
1 egg
1/3 cup margarine (I used butter)
1 cup flour
1/4 cup sugar, granulated
1/3 cup sugar, brown packed
1 teaspoon vanilla extract

Preparation
Preheat the oven to 350 degrees F.  Beat the margarine and brown sugar until light and fluffy. Add the walnuts and flour; mix well.  Reserve 1/2 cup of the crumb mixture; press the remaining crumb mixture into bottom of an 8″ square pan. Bake at 350 degrees for about 10 minutes.

Combine the softened cream cheese, granulated sugar and vanilla; using an electric mixer, mix at medium speed until well blended.  Add the egg; mix well.  Layer 1/2 cup of the Smarties or M&M candies over the crust; top with the cream cheese mixture.  Combine the remaining candy and reserved crumb mixture; mix well.  Sprinkle the crumb mixture over the cream cheese mixture.

Bake at 350 degrees for about 20 minutes.  Let cool completely before serving.

Nutritional information for one square: 217 calories, 13.6g fat, 0.7g fiber

These are really delicious! I did not use the walnuts and I opted for butter and low fat cream cheese.  Easy to make and came out tasting great.  You could use any variation of the M&M’s. I think dark chocolate or peanut butter would be amazing!
