Cowboy Supper


This is one of my friend Mel’s favorite childhood meals. And I can see why! In the spirit of the American cowboy throwing together a hearty meal out on the trail over a camp fire, we bring you the aptly named “cowboy supper”.  Dump all the ingredients together and bingo!

Ingredients:
1 lb ground beef
1 can pork and beans
½ onion, chopped
1 tbsp minced garlic
Salt and pepper

In a skillet, sauté onions and garlic.  Add hamburger and pork and beans. Salt and pepper to taste.  Cook until meat is browned and serve in a bowl.


You can eat this plain or with a dash of ketchup. We did ours with some siracha and it was hearty, spicy goodness.

Southwestern Cheeseball


Ingredients:
8 oz shredded sharp cheddar cheese
8 oz cream cheese, at room temperature
2 tablespoons butter, at room temperature
¼ cup finely diced onion
¼ teaspoon garlic powder
4 oz can chopped green chilies
chopped cilantro
crackers, for serving

In a medium bowl, combine the cheddar, cream cheese, butter, onion, garlic powder and green chilies. Mix completely.  Turn out onto a piece of plastic wrap. Form into a ball and wrap tightly. Refrigerate until set up, 2 hours to overnight.  Place chopped cilantro on a plate. Unwrap cheeseball and roll in the cilantro until coated. Serve with crackers.


First of all, I left this as a dip and added the cilantro instead of rolling in it.  I found the original recipe to be a bit blah so I added 2 Tbsp of ranch dressing, a few dashes of hot sauce and half a diced jalapeno.

Mustard Dip

I will be the first to admit that when you look at this recipe, it seems like a very odd combination of flavors and ingredients BUT this dip is incredible. Warning, once you start, you can't stop. So addicting! 


Ingredients:
1 C. yellow mustard                                                                       
chopped onions
1 C. mayonnaise                                                                              
1/3 C. sugar
1 C. sour cream                                                                                
horseradish to taste                                                      
1 envelope hidden valley ranch mix (dry)
                               

Mix together and refrigerate.  Serve with pretzels. (Makes a large batch).

World’s easiest crockpot roast recipe

It doesn’t matter if you aren’t a whiz in the kitchen, it would be really hard to mess this recipe up and that’s pretty much awesome.

Ingredients:
1 pork roast (3-4 pounds)
1 can of Coke or Pepsi
Salt & pepper
Diced onion (optional)


Place roast in crockpot.  Add one can of cola. I used Pepsi because that’s what we had in the fridge.  I placed a few diced onions on top of the roast and then sprinkled with salt and pepper.  Set the crockpot to cook on low for 8 hours. 


We wanted to make a roast the other day in the crockpot.  I didn’t have any potatoes and carrots on hand, which I would usually pair with it.  So I went online and searched these “pop can roasts” I had heard so much about.  All the reviews were great but I was still skeptical.  After 8 hours when I went to pull the roast out, it was so tender it fell into pieces.  It tasted delicious too! We put a big dent in it that night, paired with some tater tots.  Then ate the rest up throughout the week with some barbeque sauce on sandwiches.  It was awesome both ways. It doesn’t get much easier than that to make a yummy roast on a cold winter day.
