Low carb 2 ingredient pizza crust

I love pizza.  It is hands down my favorite food and I could probably eat it every day. I mean, the topping and crust combinations are endless so that you would never get bored! But...I've been trying to cut back on carbs so we tried this at my parents last weekend when I was home.  Everyone knows my mom makes the best homemade pizza in NE Iowa but I have to say, this variation did not disappoint!

Ingredients:
4 eggs
6 oz. shredded cheese, preferably mozzarella or provolone

Preheat the oven to 400 degrees.  Beat the eggs and blend in 6 ounces of cheese. Spread the cheese and egg batter on a round baking sheet lined with parchment paper.  Sprinkle with garlic powder and Italian seasoning.  Bake in the oven for 15 minutes until the pizza crust turns golden. Remove and let cool for a minute or two.

Increase the oven temperature to 450 degrees. Spread on sauce then top with ingredients of choice.  We did one sausage and pepperoni and the other we added onions and green peppers.  Top with shredded cheese and bake for another 5-10 minutes or until the pizza has turned golden brown.

Remove from oven, cut and dig in!!!


I thought this pizza was amazing. Sure, it’s not a deep dish Chicago style pizza but the flavor is great and you skip the carbs of a thick crust.  And it’s much easier than the cauliflower crust/breadsticks I’ve tried before.  I would opt for this or the low carb gluten free thin crust recipe!

Honey Garlic Alfredo Pizza

Honey Garlic Alfredo Pizza

If you’ve ever been to Fong’s Pizza in downtown Des Moines, IA and tried their honey garlic alfredo pizza, you know it’s amazing! My friends and I love it so much I decided to take a stab at making a version we can have at home anytime we like.  I must admit, it turned out pretty spectacular.  I even went so far as to add a little something, something to one and continue the creation.

Ingredients:
2 pack of pizza crust
1 jar Classico light Asiago Romano Alfredo
3 Tbsp minced garlic
1 Tbsp grated parmesan cheese
1 Tbsp Italian seasoning
1 Tbsp honey
2 packages Kraft 5 cheese Italian (shredded)

In a bowl, combine alfredo, garlic, honey, seasoning and cheese.  Drizzle crusts with honey. Spread on your alfredo mixture. Top with shredded cheese.  Drizzle with honey and bake at 350 for 12-15 minutes or until cheese is golden brown. 
This is your basic pizza.  Now for the second one I added chopped spinach and chunks of chicken breast.  It was amazing!! You could also add bacon crumbles or diced tomatoes too.  Use your imagination. Get crazy.  Next time I will try a whole wheat pizza crust and see how that melds with the honey and  garlic flavors.  Yum!!!

Pizza Dip

Ingredients:
2 8 oz blocks cream cheese (I used reduced fat)
2 tbsp sour cream (mine was sour cream and chives)
2 tbsp parmesan cheese
1 tbsp Italian seasoning
20 pepperonis
1 cup mozzarella or pizza blend shredded cheese
Optional-anything else you would like on a pizza such as onions, garlic, sausage, peppers, olives, etc.

Combine two blocks of room temperature cream cheese, sour cream, parmesan and Italian seasoning.  Dice up half the pepperonis into small pieces and mix into your cream cheese base.  Once well mixed spread into the bottom of a baking dish or crockpot. Top with shredded cheese.  Top that with the remaining pepperoni.  Bake at 350 until golden brown or in crockpot until the top cheese layer is completely melted.  Serve with crackers or small slices of bread. 


This dip is easy to throw together and was a huge hit at our Superbowl party, which is good since the game was boring.  I did a basic pepperoni dip but feel free to add whatever pizza toppings your family loves.  This dip goes a long way and is ooey gooey goodness.

Pizza sticks

We love pizza at our house.  Any form of it.  My step-daughter loves making these and she’s not big on cooking. So I thought I would give it a try the other night.  It’s like a mozzarella stick and a pizza roll had a baby.  Minimal ingredients and they taste great.  A fun, quick and easy to make twist on pizza. 

Ingredients:
Egg or spring roll wrappers
String cheese
Pepperoni (I used turkey pepperoni)
Egg white

Place 3 or 4 pepperonis in the middle of an egg roll wrapper, so that they run corner to corner.  Set mozzarella stick on top.  Roll tightly and use a beaten egg white to seal the wrapper together.  Place in fryer or bake until golden brown and crispy and cheese is beginning to bubble out.

Buffalo chicken pizza

Ingredients
1 (13.8 oz) roll Pillsbury Classic Pizza Crust (Substitute 12 ounces of refrigerated pizza dough)
1 cup buffalo wing sauce (you can vary this depending on how spicy you want it)
2 cups shredded cooked chicken
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
2 green onions, thinly sliced

Heat oven to 400 degrees. Spray a baking sheet (with sides) with cooking spray.  Form pizza dough into a 15-inch by 10-inch rectangle (this doesn’t have to be exact, just close). Place dough onto baking sheet and bake for 8 minutes.

While the pizza crust bakes, add buffalo wing sauce and shredded chicken to a medium saucepan over medium heat. Cook, stirring occasionally, 3 to 5 minutes or until thoroughly heated.
Evenly spread the buffalo chicken over the baked pizza crust then scatter the cheddar cheese, mozzarella cheese and half of the sliced green onions on top.  Place back in the oven until cheese is melted and begins turning golden brown. 


I had never used a pizza crust from a tube before but I figured what the heck and gave it a try.  This pizza was awesome! And I don’t think it could’ve been any easier to make! You could also try the same thing on a pita bread or tortilla for your crust.  Or make a homemade dough but that’s going to add more time.  Two thumbs up.
