Crockpot beef stew

If you have a busy schedule and lots of hungry mouths to feed at night like me, then you can appreciate this crockpot beef stew! It was great to come home to dinner ready and a wonderful aroma floating through the air.  You can customize your stew anyway you like…some people will want to add veggies or take out celery or whatever…but here’s what we did.

2 pounds potatoes diced
1 bag of baby carrots
1 large white onion
3 stalks of celery diced
2 pounds of beef stew meat
1 large container of beef broth
2 cups water
Salt, pepper and garlic

Throw in the crockpot on low for 8-10 hours.  Ours has a fun feature that puts it to warm once it is done cooking.  This was pretty good but next time we will do 2 containers of beef broth.  The first bite was a little blah and we had added ample salt and pepper so we think more beef brother instead of water would’ve done the trick.  Rob and the boys added a few dashes of lite soy sauce to kick theirs up a notch.  I went with some Frank’s redhot and a slice of fat free American cheese.  Yummy!  The meat was tender and shredded apart, the veggies were perfectly done and this warmed the belly.  And we have a huge bowl of leftovers to eat up this week.  Like seriously, if you’re hungry come on over, we have plenty to share. Which makes me wonder, could you freeze stew? Or would it be a soggy, mushy mess?  Hmmm….
