Pork Steak Recipe -- Porky Pig Never Tasted So Good!!

Review by Rachael
Pork steak was on sale a few weeks ago so I picked some up. I have cooked pork many times, but never a pork steak. So I took to the internet to find a recipe for preparing these. I was intrigued by this one but was a little nervous I wouldn’t like it.

Ingredients:
¼ cup butter
¼ cup soy sauce
1 bunch green onions
2 cloves garlic
6 pork butt steaks

I only had 2 pork steaks because they were huge! It was more than enough to feed three of us. I just cut them up in to six smaller sections so they were easier to fit in the pan.

Directions:
1.       Melt butter in a skillet, and mix in the soy sauce. Sauté the green onions and garlic until lightly browned.
2.       Place the pork steaks in the skillet, cover, and cook 8 to 10 minutes on each side. Remove cover, and continue cooking 10 minutes, or to an internal temperature of 145 degrees F.

Of course I didn’t have green onions and I didn’t remember to buy any, so instead I cut up some yellow onion and added it in with the garlic. I laughed when the directions said to cook until lightly brown – the soy sauce makes them instantly brown; kinda hard to tell but I used my best judgment and it worked.

I am not sure if it was because I didn’t actually have six steaks but there was more than enough liquid in the pan. Plus the steaks were a little fattier cut so they juiced themselves. It was more like they boiled instead of pan fried. Next time I would actually reduce the amount of butter I put in this recipe. It would help reduce calories and fat plus make it less juicy.

The smell was a bit overwhelming while cooking. I didn’t mind it but Jake kept claiming he wouldn’t eat whatever was making “that smell”.

Finally they were done! I LOVED the flavor!!! Jake was refusing to eat any but I made him try it. He ended up eating several servings! I would say it was a hit all around!

We will definitely make these again!! Next time I may try this sauce mixture with a pork roast in the crock pot.

Heads up!!!

Are you ready for the weekend?! The ladies of TT123 are! And what a treat we have in store for you. This weekend we will be holed up in a cabin in the middle of nowhere experimenting with recipes and crafting projects. And it won't just be the three of us. We are bringing in some of our favorite women to help us create and enjoy. We can't wait to share. Keep an eye out Monday for lots of posts. Have a super weekend!

Healthified spicy wraps

Review by Lyndee:

4-5 Burrito shells -depending how thick you want them (you could use a low carb variety too)
1 package of cream cheese (I used reduced fat)
2 green onions
Small can of black olives (optional)
Small can of green chilies
Cilantro to taste – I don’t really measure it because it’s hard to measure cilantro.  I used a small handful. 2 tbsp.(ish) of hot sauce (I used Siracha hot sauce)
¼ cup shredded cheddar cheese (I used 2%)

Mix everything except the burrito shells, cream cheese and shredded cheddar in a food chopper for just a few pulses.  Mix with the cream cheese, spread on the shells, sprinkle with shredded cheese.  Refrigerate for a couple hours, cut and enjoy!

These were great. I don't even like olives but they didn't bother me in this recipe at all.  Very fun finger food for a party or as a wrap for lunch. You could add chicken breast too.

BBQ ribs in the crockpot

Review by Lyndee:

1 pound boneless pork ribs
Sweet Baby Ray’s BBQ sauce
Pork Rub (I used Famous Dave’s but any would do)
Hickory smoke (optional)

Place 1 cup of water in the bottom of crockpot. Set ribs inside and pour pork rub over them. Be generous.  Give a few dashes of pepper and hickory smoke as well.  Pour BBQ sauce over the ribs until nearly covered.  Cook in crockpot on low for 6 hours.

I cooked mine for 8 and they were a little over done. The boys still devoured them because they love ribs but they were too dry for me. I think 6 hours would be better. Also, I forgot to sprinkle some brown sugar on them before I added the barbeque sauce.

Healthy veggie soup with cheese

Review by Lyndee:

1 bag broccoli, cauliflower and carrots (frozen food aisle)
1 container plain greek yogurt
1 can chicken breast
½ cup 2% shredded cheddar cheese
Onion
Salt & Pepper (to taste)
Hot sauce (optional)

Cook frozen veggies and chopped onion per instructions on bag.  Add yogurt and chicken breast.  Let simmer until veggies are soft.  Salt & pepper to taste.  Add a few dashes of hot sauce if you would like. Stir in shredded cheese just before serving.

If it’s runny, mix ¼ cup of milk and 2 teaspoons of flour.  Pour in slowly while stirring.

This turned out pretty well for a throw together, last minute soup of the top of my head.  The only thing I would change is maybe when cooking the veggies, instead of using water as directed on the bag, I would try some chicken broth to add a little extra flavor.

Froggy Cupcakes -- RIBBIT!!!

Looking for a cute cupcake idea for the little boy in your life?  Well, I think I found just the ticket.  Froggy Cupcakes.

Here's what you'll need:
  • Your favorite boxed cake mix.  We chose a new Betty Crocker flavor (Hot Chocolate).  Yum!!
  • Green Frosting
  • White Life Saver Mints
  • Chocolate Chips
  • Twizzlers Pull-and-Peels

Here's what you'll do:
  • Make your cupcakes pursuant to the box instructions.
  • Once cool, frost your cupcakes.  You can always add a little green food coloring to white frosting if you can't find green frosting.
  •  Then, create the froggy eyes by first placing two white life savers on your cupcake, like so...

  • Then, add a little dab of frosting in the hole, and stick a chocolate chip (pointy-side down) in the hole of each life-saver...
  • Then, create a froggy smile by using some Pull-and-Peel Twizzlers.
  • Pull apart a single strand of licorice, and place on your froggy face -- however you'd like.  Jacky made some of his frogs happy, and some not so happy...

  • And, here is our final family of frogs.  All ready to be enjoyed by the kids' pre-school class! RIBBIT!!

Easy Reduced Fat Honey Mustard

Review by Rachael:

¼ cup Mayonnaise (I used fat free)
1 Tablespoon Honey
½ Tablespoon Lemon Juice
1 Tablespoon prepared Mustard

Mix together all ingredients. It was a little lumpy at first but after using the wire whisk it was just fine. Everyone enjoyed it and it was very easy. You could use lime juice as well, if desired. This would also be an easy recipe to alter if you wanted it sweeter.
