Garlic Chicken


Garlic Chicken

We were looking for a healthy dinner Saturday night that would satisfy the adults and the kids and decided to try this.  It looked easy enough and I had all the ingredients on hand.  Most people would as there are only four.    

Ingredients
4 boneless/skinless chicken breasts
4 garlic cloves (I did 1 heaping tablespoon of minced garlic)
4 tablespoons of brown sugar
3 teaspoons of olive oil

Preheat oven to 500 degrees and spray a cake pan with non-stick spray. In small pan, sauté olive oil and garlic until tender.  Remove from heat and stir in brown sugar.  Place chicken breasts in baking dish and cover with the garlic and brown sugar mixture.  Add salt and pepper to taste.  Bake uncovered for 15-30 minutes or no longer pink inside.


I found there was not a ton of mixture so just drizzle over the chicken breasts. They will not be submerged or fully covered. I was nervous that I hadn’t made enough but it ended up being just fine.  The chicken was tender and juicy with a great flavor.  I paired it with a little side of Sweet Baby Ray’s sweet and spicy bbq sauce and some asparagus.  This was quick, super easy, cheap and totally tasty.  We will definitely be making this at our house again!
