Scalloped potatoes and ham


Scalloped potatoes and ham

Review by Lyndee:

6-7 potatoes (peeled and diced)
1 package diced ham (16 oz)
1 sleeve saltine crackers
1 stick butter
1 cup milk
½ cup flour
Shredded cheddar

Cut potatoes and bring to a boil for about 10 minutes.  Strain and add to a greased 9x13 pan.  Shake milk and flour together (or stir briskly with a whisk).  Sprinkle ham on top of the potatoes.  Pour milk and flour mixture over.  Add some salt and pepper if you wish.  Melt the stick of butter and add one sleeve of well crushed saltines.  Mix.  Spread this out on the top of the potatoes.  Cover with foil and bake for 40 minutes.  Remove foil and add some shredded cheese. Bake for 15 more minutes or until the cheese is golden brown. 

This is a delicious twist on your normal scalloped potatoes.  The cracker “crust” and cheese take this from ordinary to yummy casserole.  Mitchell and Michael devoured this and went back for seconds.  We still had plenty left over for lunches this week too.  Cheap, easy and tastes ooh la la on a cold Iowa day.
